What's for dinner? - Week 4
What's for dinner this week? Not much! My husband is gone this week, so new recipe reviews are on hiatus. Being the sole caregiver for my two little monkeys doesn't leave me with enough energy to cook and I'm guessing those little monkeys might not even like the end result! The recipe review will return next week.

What's for dinner? - Week 3
Okay, this week's recipe review is not really what's for dinner, it should be called what's for breakfast instead. The recipe I chose was Peanut Butter Pancakes from about.com:Toddlers.
I was a bit confused by the recipe as the ingredient list calls for 3 Tbs of melted butter, but the butter is not mentioned in the directions. Since I try to cut butter/oil from recipes anyway, I decided not to add it. The other modifications I made to the recipe were to use part whole wheat flour, add some oats, and add some applesauce. The recipe calls for 1 1/4 cup flour, so I used half unbleached standard flour and half whole wheat flour. I added a couple of handfuls of oats, probably about 1/3 cup. The batter was quite thick, so I added applesauce until it was the consistency that I wanted. It ended up being about 1/2 cup of applesauce.
They turned out rather well. I think I might increase the peanut butter next time, they weren't quite as peanut buttery as I would have liked. The boys liked them, too. I think they will be a great snack for on the go at Stroller Strides.

Healthy Momma Challenge 2010
It is time to register for the Get Fit & Healthy Momma Challenge! Registrations are due by Friday, March 12.
The Healthy Momma Challenge is a 6-week program for a healthier and happier YOU!!!! The Healthy Momma Challenge supports participants while they make strides in three very important areas: mind, body, and spirit. This includes personal "Mom only" time, healthy eating, and fitness. This is a team competition and the teams consist of 3 participants each. If you are interested in participating, but need help with getting a team together - no problem! I will match unmatched participants. Teams count points for making healthy choices for your mind, body, and spirit and points are submitted weekly. The three teams with the most points at the end of the six weeks will win prizes!

The Get Fit Challenge is an individual competition that lasts 12 weeks, from March 15 – June 7, to see what changes you can make in your life to create a healthier, stronger, leaner you! Just think, you've already got the exercise part down (you may just need to step it up a notch or two at class) so now you just need to add in the proper eating habits. The best part is that you will have your fellow Stroller Striders encouraging you along the way so you are sure to succeed! The person whom makes the most significant improvements in their fitness levels will be our "Get Fit Challenge Winner".
The Get Fit Challenge also begins on March 15, but fitness testing will be held March 13, 14, and 15. The fitness test will consist of curl ups, shuttle run, endurance run/walk, and push ups. For more information on the the Get Fit Challenge, click here.
There is no charge to participate in the Get Fit Challenge, but participants must also be registered for the Healthy Momma Challenge and be active Stroller Strides members.
If you are not currently a Stroller Strides member, take advantage of the Healthy Momma Challenge package! For only $75, get the Healthy Momma Challenge registration, Stroller Strides registration, and 3 classes per week for the 6 weeks of the challenge - that is a savings of $50!!
